What is a Grease Trap?

Restaurants and other food service businesses generate tons of cooking oil, grease and food waste every day. If this waste is not managed properly, it can cause major enviromental problems. Grease traps are designed to capture the hot oil and greases. As the oils and greases cool they will harden and allow the liquid to flow out the sewer drains and keep the solids trapped in the tank.

Grease traps come in many different sizes and depends primarily on the amount of waste your business will produce. Grease traps can be located inside or outside of the building. As a business owner or manager, you should know where the grease trap and drain lines are located.

Maintaining your business's grease trap is very important. A build up of these solid grease and oils can cause problems throughout the building that could have been prevented with proper maintenance such as: drains becoming plugged and bad odor throughout the building.
